My youngest is starting kindergarten this year, and the thing he is most looking forward to is riding the school bus. What about me? I was concerned since the big yellow bus runs before daybreak, and I had no clue how (or what) I was going to feed him while still getting him out the door on time.
I discovered the answer in the most unexpected of places: the cookie container! These portable, warmly spiced breakfast cookies are loaded with nutritious grains, fibre, and protein, making them a filling grab-and-go meal that my kids (and yours!) can have on their way to the bus stop. This chewy delight is easy to create.
What makes this recipe so clever isn't only that the kids receive cookies for breakfast; it's also that you can customize them anyway you like. Use any mix-ins you currently have on hand, or let your kids make their own. Here are a few suggestions to get you started.
- 1 cup chunky mix-ins: Combine dried fruit (such as dried cherries or golden raisins), shredded coconut, chopped almonds, granola crumbles, shredded carrots, and/or cereal in a bowl.
- 1/4 cup sugary mix-ins: Chocolate chips, butterscotch chips, M&Ms candies, and/or chocolate-covered sunflower seeds can be mixed and matched. If you don't want to use the sweet mix-ins, add a few extra nuts or coconut.
Replace half of the butter (1/2 stick) with 1 mashed ripe banana for a lower-fat cookie with a cake-like texture.
